Roast Beef: The ultimate convenience food!

We feel that the slow cooked, braised pot roast is the ultimate convenience food. Fix one of our basic slow-cooked roast beef recipes in the morning before work (with just a few minutes of preparation time), and come home to the savory and tantalizing smell of dinner. Or prepare it in the evening, and wake up to the aroma.

There are two ways to cook pot roast, moist or dry. We prefer to use moist heat to slow cook our tougher cuts of roast, which is what the old-timers called braising, or braised beef. The other method is to roast with dry heat

Basic slow – cooked roast beef recipe (Braised Beef)

The basic recipe for slow-cooked pot roast is suitable for many cuts of roast such as; arm, chuck, rump, Pikes Peak, and bottom round:

Slice an onion thinly into rings.

In an oiled roasting pan, place half of the onion rings on the bottom of the pan, set frozen roast on top of onion rings. Place remaining onion pieces on top of roast.

Add water to the pan, filling from ¼ to ½ the height of the roast. It is optional to add a little wine or vinegar to the water, or both. Cover roast with sea salt and pepper, and if additional seasoning is desired, season to taste.

Cover and place in 250 F oven, and let cook for 8 to 12 hours. The roast comes out falling apart tender and absolutely delicious, with a superb beef broth that can be used for gravy, au-jus, French-onion soup and other soups, stews, and any number of savory creations. You may want to grill the roast on each side for a minute or two before slow cooking for a nice, smoky flavor.

Experiment and be creative

While these are very basic recipes, there are infinite ways you can flavor the roasts you cook according to what you like. You have the option of including any combination onions / powder, garlic / powder, vinegar (tenderizes meat and gives a good flavor), wine, mustard, Worcestershire, thyme, rosemary, marjoram, chili powder, green chilies, cumin, and the list goes on.

Rapid – cooked, tender roasts

There are different roast beef recipes you can use to cook a tender, premium roast like a tenderloin roast or an eye of round roast:

The following is one of our most basic roast beef recipes for tender, premium roasts.

Rub with olive oil, salt, pepper, and other seasonings to taste.

Sear on all sides on a grill, until outside is brown and grill marked, then set on a rack in a pan and place, uncovered, into a 425 F degree oven for about 25 minutes or until desired doneness. Use a meat thermometer so you don’t overcook it.

The roast continues to cook after it is taken out of the oven, so if you want it medium rare, take it out of the oven when it reaches 130 - 135 F.

Roast beef recipes for stove top cooking

With vapor – lock cookware such as Waterless Cookware ™, your roast beef recipes can transfer to the stove - top. Here is the basic roast beef recipe for stove - top cooking:

Heat large pan to medium heat

Place roast on dry, hot pan, allow to sear until it stops sticking

Sear every side of roast, until all sides are browned

After searing the final side, add desired seasonings or flavorings to all sides of roast

Add 2 tsp. of water, cover, and turn burner to low heat

Cook on low heat for 2 – 4 hours, depending on the size of the roast.

Do not remove lid for first hour

Use meat thermometer to determine doneness

Longer cooking on low heat continues to tenderize the meat

Open fire – Dutch-Oven roast

If you’re fortunate enough to be able to have an open fire, and cook in a fire pit, designed for outdoor cooking, this outdoor, Dutch –oven recipe is delicious, and fun for the whole family.

Build up large bed of coals in fire pit

Place cast-iron grate with 5” – 6” legs in secure spot where coals can be shoveled underneath the grate

In an oiled, cast-iron Dutch oven place

3 -5 pound rump roast or Pikes Peak roast,

one large onion, sliced

8 potatoes quartered

16 green chilies, roasted, peeled, and seeded

Sea salt and pepper to taste

Club soda, enough to cover up to ¾ the height of the roast

Build bed of coals under grate up to 4 inches from grate

Place Dutch Oven on grate, heat until steam emerges

Allow coals to burn down and cook slowly, replace coals as needed, but don’t get too hot.

Cook 5 – 6 hours over low heat from coals

Things to do with left-over roast beef

Make sandwiches,

Or reheat in a little oil, with chili powder, cumin, oregano, and a touch more garlic, and you have burrito filling.

Make soups and stews

Beef and noodles

This is a favorite of kids. Take left over slow-cooked roast, and shred to bite size pieces, mix with remaining broth, heat to thicken. Add flour if desired for even more thickness.

Heat water and cook wide egg noodles (like fettuccini noodles) until they are still firm.

Drain noodles, and ladle roast beef mixture on top of them
