Quick and Easy Grass Fed Ground Beef Recipes
I could fill a book with just ground beef recipes alone, and maybe someday I will. So I will be adding to this page continually. But for now, I’ve started with a few traditional, family favorites that are tried and true.
With our daughter and her friends now in college and away, we don’t feed as many as we used to, but still cook the same way. Only now we freeze the leftover for later convenience. (Or to send back with the college kids)!
So the ground beef recipes listed here are suitable for feeding yourself, a few other adults, and large numbers of teenagers. If the recipe is too big, it’s easy to cut in half, but really, having high quality, home-cooked frozen meals when it’s hectic is a Godsend.
How I measure (which is very little)
Our
Diamond F Brand 100% grass fed beef
comes in 1.5-pound tubes, so my ground beef recipes call for tubes of ground beef. Just remember every tube is 1.5 pounds. And when it comes to any measurements, please judge the quantities to use by your own tastes. For instance, in the taco recipe, if you like it mild, use mile chili powder and not that much of it, if you (and everyone you eat with) like it really hot and zesty, then use medium or hot chili powder and lots of it.
Onion / tube ratio
As a general rule, I use a 1:1 tube to onion ratio. Meaning for every 1.5-pound tube of Diamond F Brand 100% grass fed ground beef; I use one medium to large onion in almost every ground beef recipe. If I don’t feel like cutting up an onion, I just use 2 tsp. of onion powder for every tube of ground beef.
Cook the onions (and garlic) in the beef fat
I usually start by browning the beef in a large skillet or large pot, depending on the recipe, until it is mostly cooked and the fat runs to the side of the pan when you tip it.
After pushing the beef to one side while allowing the fat to run to the other, place the diced onions in the hot fat and stir occasionally. Once the onions are tender, stir into the beef and finish browning. This method holds true for most ground beef recipes, unless otherwise noted. Another method is to sauté onions and garlic in olive oil or butter for extra flavor.
Remember, the desirable, life-enhancing nutrients that you are seeking in grass fed beef are in the fat, so use it freely and enjoy it. Our Diamond F Brand 100% grass fed beef is 85% lean.
Beef Stroganoff
Ready in 30 minutes
2 tubes ground beef (3 pounds)
2 tsp. onion powder
2 onion finely diced
8 oz organic sour cream (unless you’re lucky enough to get grass fed sour cream)
1 Large package wide egg noodles
salt and pepper to taste
12 oz. fresh sliced mushrooms (optional – determine amount to own taste)
3 Tbsp olive oil
Brown ground beef on medium heat in a large skillet or large pan, depending on recipe and proportions. Sautee onions and mushrooms in olive oil. Add onions and mushrooms to ground beef. Season to taste. Add sour cream in the last 15 minutes before serving.
Boil wide egg – noodles with a little salt until they are firm but done. Serve beef stroganoff over egg – noodles.
Stroganoff can also be served on top of baked potatoes or bread.
*As a side note, one of my favorite cool salads to serve with stroganoff is cucumber – tomato – onion vinaigrette. Mix 3 sliced cucumbers with 2 thinly sliced tomatoes and 1 thinly slice red onion. Toss with vinaigrette of 1 Cup red wine vinegar, ½ cup oil, ½ cup sugar, salt, pepper and dill to taste. As always, proportion ingredients to taste.
Taco Recipe
2 Tubes Ground Beef (3 pounds)
6 TBS Chile Powder
1 Onion finely diced
2 TBS Cumin
¼ tsp. Mexican Oregano (never over-do oregano)
2 Clove Garlic
Salt & pepper to taste
Brown ground beef
Sauté onions and garlic in hot beef fat,
Add chili powder, cumin, salt and pepper to taste.
Serve in warm taco shells topped with your choice of cheese, sour cream, salsa, lettuce, tomato, green onion, and cilantro as garnish. Add pickled jalapenos if desired.
New Mexico Style Green Chili
2 tubes Diamond F Brand ground beef
2 large onions
4 large cloves garlic
10 cups diced green chilies, (roasted, peeled, and finely diced)
8 cups beef stock, or chicken or turkey stock
Brown ground beef, Sauté onions and garlic in olive oil, add to cooked ground beef. Add green chilies to pot, and add beef stock.
Let simmer for an hour or two
Serve with tortillas and sour cream, or corn tortilla chips, sour cream, and guacamole
